Hails from Long Island, New York! As with most Italian families, Occhipinti found himself literally “growing up” in the kitchen. He learned that quality food and conversation brings alot to the table.
Although his first job was at a local pizzeria, he quickly realized his gift- he could “give the people what they wanted’---great food and conversation which ultimately puts a smile on his customers faces. This experience helped Occhipinti find his passion in the kitchen. At age 22, he enrolled at the French Culinary Institute to hone in on his budding knowledge of the food industry, learning innovative cooking techniques and how to make his cuisine a work of art.
In 2008, Occhipinti was diagnosed with Crohn’s disease, a chronic digestive and autoimmune disorder. Using his knowledge of food and nutrition from his education at the French Culinary Institute, he continuously works on creating delicious dishes for all individuals who live with digestive disease.
Occhipinti has worked in Jean Georges restaurant Mercer Kitchen, Andrew Carmellini’s Locanda Verde and Fourth Wall Park Avenue Seasonal. His passion for Italian cuisine lead him to a little town called “Orvieto” right outside Tuscany. Studying under a James Beard award winning chef, Lorenzo Polegri, there he learns traditional Italian techniques as well as the culture. Once Occhipinti moved back to the Island he helped open up the fine dining restaurant under the name of Jema along side his mentor Franco Sampogna. At this stage Occhipinti was given the room for growth along side of guidance to maximize his full potential, assuming a leadership role in the kitchen.
Maldon & Mignonette is an authentic American Bistro with a seasonal rustic flare. All dishes are “SEASONED WITH AUTHORITY”. The menu provides all customers with a chance to appreciate seasonal cuisine showcasing what the island has to offer.
